Doria is a Japanese rice casserole dish. It's simple to make and delicious. We made it vegan using soy milk and tofu but it could also be made lacto-vegetarian or even with meat. === Ingredients === * 1-2 Onions * Vegetables of your choice (we use carrots and one green vegetable like string beans or green peppers) * Tofu or tofu substitute (e.g. chicken). If you're using tofu, extra-firm tofu takes much less time to fry. * 1-2 cups of soy milk or soymilk subsitute (e.g. milk) * 2-3 cups of white short or medium grained rice * All-purpose flour * Salt * Vegetable or soup base (optional) * Seasonings. (We use pepper, basil and oregano) * Toppings which might include panko (Japanese bread crumbs) or monterey jack or cheddar cheese * Bulldog Brand fruit and vegetable sauce or Otafuku Okonomi sauce (available at Japanese or Asian grocers) or Worcestershire sauce === Directions === # Start 2-3 cups of rice (300-500ml dry) cooking in your rice cooker if have one or on your stove if you do not. # Preheat your oven for 425 degrees F. # Fry tofu in oil (sesame oil or a mix of sesame and vegetable or sesame and peanut would be ideal) in a saute pan until crispy and brown. Then add carrots, onions, and other vegetables and cover and cook until they are soft. # Add 2-3 tablespoons of all-purpose flour to the pan and mix thourghly in the pan adding a small bit of oil if it is dry and sticking. # Add soymilk or milk and stir. Over the next 2-3 minutes, the sauce should thicken. Add the milk slowly until you reach the right consistency and have enough to cover the top of your casserole dish. You can, if needed, add more flour now although be careful as it will clump in the pot. # Mix in 1-2 boullion cubes or a spoon of "Better Than Boullion" paste and stir throughouly. # Add salt and seasonings to the mix to taste. # Spread the rice in a casserole dish or other oven save dish (we use a cast-iron pan usually). Pour the tofu and vegetable mix on top of it and spread it evenly with a spoon. # Cover the top with panko or cheese and place in the oven. Cook for 10-15 minutes or until the toppings are brown. # Let cool for 10-15 minutes.
