ELS/Summer Soup

We've missed ELS community dinners over the last months. It's hard to believe that Summer Solstice is quickly approaching!

While we can't all gather together quite yet, perhaps there are things we can do to stay connected! Over the last month, our household has fermented a batch of Tarhana, one of the first instant-soups from Turkey. It's pretty good!

We'd like to synchronize some summer soup in celebration of the solstice! If you're interested, put your name and contact method in the following table. During the week, we'll bike by and leave you a package of Tarhana, so that we can all eat soup together for Beowulf Cluster on Sunday night! (You can also contact one of us out-of-band. the main thing is we have to figure out your address to get the soup to you)

Preparation

Pre-preparation

  • By Noon on Thursday, re-hydrate your tarhana powder in a small bowl with 1 cup of water per serving.
    • We will be including some fresh tomato paste with each batch of tarhana. that can go in here, or when you add the rehydrated tarhana later. You want about a teaspoon of tomato paste per serving.

Preparation

  • Put a table spoon of neutral oil or butter in a soup pot, and heat.
  • add red pepper flakes, and let them sizzle for 15 seconds
  • pour in the rehydrated Tarhana. Add a second cup of water per serving.
    • Some recipes use milk for some of the liquid. That will also be delicious!
  • bring to a boil, lower to a simmer for 15 minutes. stir occasionally.
  • serve!
    • optional garnishes can include a dash of olive oil, cream, or parsley.
