Beet salad

  • Beets are great with citruses and sheep/goat cheese.

  • 5 beets
  • 1/2 lb Bulgarian Sheep Feta
  • 2 oranges
  • 1 avogados
  • 1/2 cherry tomatoes
  • 1 bunch green onions
  • salt and pepper
  • olive oil
  • white wine or other vinegar


1. Boil beets with skin until soft. Peel by hand once they become soft (the skins should just sort of fall off). Cut off the edges.

2. Dice beets, feta, oranges, avogados, and green onions. Cut cherry tomatoes in halves.

3. Mix them all together.

4. Add salt, pepper, olive oil, and white wine vinegar until it tastes good.
