# Preheat your oven for 425 degrees F.

# Fry tofu in oil (sesame oil or a mix of sesame and vegetable or sesame and peanut would be ideal) in a saute pan until crispy and brown. Then add carrots, onions, and other vegetables and cover and cook until they are soft.
2. Preheat your oven for 425 degrees F.
# Add 2-3 tablespoons of all-purpose flour to the pan and mix thourghly in the pan adding a small bit of oil if it is dry and sticking.

# Add soymilk or milk and stir. Over the next 2-3 minutes, the sauce should thicken. Add the milk slowly until you reach the right consistency and have enough to cover the top of your casserole dish. You can, if needed, add more flour now although be careful as it will clump in the pot.

# Add salt and seasonings to the mix to taste.
4. Add 2-3 tablespoons of all-purpose flour to the pan and mix thourghly in the pan adding a small bit of oil if it is dry and sticking.
# Spread the rice in a casserole dish or other oven save dish (we use a cast-iron pan usually). Pour the tofu and vegetable mix on top of it and spread it evenly with a spoon.

# Cover the top with panko or cheese and place in the oven. Cook for 10-15 minutes or until the toppings are brown.
