Nut loaf

Inspired by these recipes:
Ingredients[edit]
- 2.5cups ground walnuts (other options: cashew, almonds, or a mix)
- 1 cups rough ground oat flour or whole wheat flour (GF option: chickpea flour)
- 2 cups panko (GF option: 2 cups cooked rice)
- 3 eggs
- 1/2 cups milk or half and half (Dairy-free option: canola/olive oil or just broth)
- 1 medium onion
- 1-2 carrots
- 1-1.5cups of red lentils
- 3-4 stalks of celery or equivalent fennel
- (option: a couple mushrooms thinly sliced and cooked with other veggies)
- 1Tbs sweet paprika
- salt to taste (1tsp?)
- spices to taste (1/2 tsp each of fresh black pepper, sage, thyme)
Instructions[edit]
- dice or grate fresh veggies (i put through the food processor)
- boil lentils until they're soft (30 minutes for green lentils, less for red)
- cook the vegetables in oil until they're nice and fully soft, add lentils and cook 5-10 minutes more
- while the veggies are cooking, combine the nuts, panko, and flour/grains
- whisk the eggs and milk separately, once fully whiskey, pour those, along with the spices, the veggies, and everything else together
- butter or grease a loaf pan
- bake in a preheated 350°F oven (cover with foil for ~40 mins if possible)
- every ten minutes or so, open the open and add 1/4-1/2 cup of water or (if you're feeling fancy water mixed with butter or olive oil) this is basically just to make sure that the whole thing doesn't dry out
- cook for about 40-50 minutes
You'll want to serve it with groovey gravy or some other kind of gravy. In a pinch, ketchup also will also always work.
