Nut loaf

Inspired by these recipes:

Ingredients

  • 2.5cups ground walnuts
  • 1 cups rough ground oat flour or whole wheat flour
  • 2 cups panko
  • 3 eggs
  • 1/2 cups milk or half and half
  • 1 medium onion
  • 1-2 carrots
  • 1-1.5cups of red lentils
  • 3-4 stalks of celery or equivalent fennel
  • 1Tbs sweet paprika
  • salt to taste (1tsp?)
  • spices to taste (1/2 tsp each of fresh black pepper, sage, thyme)

Instructions

  1. dice or grate fresh veggies (i put through the food processor)
  2. boil lentils until they're soft (30 minutes for green lentils, less for red)
  3. cook the vegetables in oil until they're nice and fully soft, add lentils and cook 5-10 minutes more
  4. while the veggies are cooking, combine the nuts, panko, and flour/grains
  5. whisk the eggs and milk separately, once fully whiskey, pour those, along with the spices, the veggies, and everything else together
  6. butter or grease a loaf pan
  7. bake in a preheated 350°F oven
  8. every ten minutes, open the open and add 1/4-1/2 cup of water or (if you're feeling fancy water mixed with butter) this is basically just to make sure that the whole thing doesn't dry out
  9. cook for about 40-50 minutes

You'll want to serve it with groovey gravy or some other kind of gravy. In a pinch, ketchup also will also always work.
